Istanbul, Cappadocia, Ephesus, and Pamukkale in 7 days
From Istanbul: Day Trip to Cappadocia with Flight & Lunch
This is the classic Turkey circuit — Istanbul’s 1,500-year history, Cappadocia’s lunar landscape and hot air balloons, the Roman ruins of Ephesus, and the white calcium terraces of Pamukkale. Seven days is the minimum to do it without feeling rushed. Read the logistics section before booking — the transport between these sites requires domestic flights, not day buses.
Honest logistics first
“Day trips” from Istanbul to Cappadocia, Ephesus, and Pamukkale are sold widely and are technically possible. They are also exhausting, expensive, and deeply unsatisfying. Here is why:
- Cappadocia from Istanbul: 4:30 am departure, arrive 8 am, see Göreme for 3 hours, fly back at 6 pm. No balloon (balloons require being on-site at 5 am — which means sleeping in Cappadocia the night before). 12+ hours in transit for 3 hours of sightseeing.
- Ephesus from Istanbul: Fly to Izmir (~1 hour), drive 1 hour to Selçuk, tour Ephesus (2-3 hours), fly back. Possible but the site deserves more time.
- Pamukkale from Istanbul: Fly to Denizli (or Izmir + 3-hour drive), see the terraces for 2 hours, return. Hierapolis ruins deserve a half-day minimum.
This 7-day itinerary uses internal flights and overnights, which is how this circuit actually works for most travelers. Total internal flights: 2 (Istanbul → Cappadocia; Cappadocia → Izmir for Ephesus/Pamukkale).
The routing
Day 1-2: Istanbul (2 nights)
Day 3-4: Cappadocia, base Göreme (2 nights, fly IST→NAV/ASR)

Set alarm for 4:30 am if booked on an early flight to Cappadocia.
Day 3: Fly to Cappadocia — balloon prep and Göreme
5:30 am — Depart IST or SAW for Nevşehir (NAV) or Kayseri (ASR). Flight approximately 1h15. Transfer to Göreme (30-45 minutes by shuttle). Arrive Göreme: 9-10 am.
Important: Book your balloon flight on Day 4 morning as soon as you arrive — confirm with your cave hotel or book online in advance. Balloon flights depart around 5:30-6 am and last 1 hour. They must be pre-booked.
10:00 am — Check in to cave hotel and drop bags. Explore Göreme village (30 minutes — it is small and easily covered on foot).
11:00 am — Göreme Open Air Museum (1.5 hours). Byzantine cave churches with intact frescoes, 10th-13th century. Entry ~720 TRY. One of the finest open-air museum complexes in the world.
1:00 pm — Lunch in Göreme. Dibek Restaurant for slow-cooked Cappadocian food (güveç, testi kebab).
3:00 pm — Walk the Rose Valley (starts 1 km outside Göreme). 2-3 km trail through eroded volcanic rock formations — free, spectacular, best in late afternoon when the light turns the tufa pink and orange. Allow 2 hours.
6:00 pm — Uçhisar Castle at sunset (15-minute taxi, ~200-300 TRY). Highest viewpoint in Cappadocia.
8:00 pm — Dinner at cave restaurant. Local wine from Cappadocian grapes (Öküzgözü red is the regional variety). Early night — balloon at 5 am.
Day 4: Balloon flight, Red Tour, and more Göreme
5:00 am — Hot air balloon flight
This is the reason many people come to Cappadocia. Dozens of colorful balloons rising over fairy chimneys and valleys as the sun rises — one of the world’s great travel experiences. Duration approximately 1 hour. Arrive at meeting point around 5-5:30 am.
Book the Göreme sunrise balloon flight well ahead — they sell out in spring and autumn, and cancellations for weather are common (~20-30%). Budget 6,000-10,000 TRY per person.
Return to hotel by 8 am. Breakfast.
9:30 am — Red Tour (half day)
The Cappadocia Red Tour covers: Devrent Valley, Pasabağı mushroom formations, Avanos pottery town, and overlooks at Göreme and Ürgüp. Half-day group tour, departs from central Göreme.
Red Tour with entry fees and lunch covers the standard circuit with a guide — good value.
1:00 pm — Lunch included in Red Tour, or return to Göreme for independent lunch.
3:00 pm — Afternoon free in Göreme or short taxi to Derinkuyu underground city (entry ~360 TRY, 45 minutes). One of the best underground cities — extends 85 meters down.
7:00 pm — Final Cappadocia dinner. Pack evening for early next day. You fly to Izmir (for Ephesus) in the morning.
Day 5: Fly to Izmir — Ephesus
Morning — Early flight from ASR or NAV to IZM (Izmir Adnan Menderes airport). Flight ~1 hour. Transfer to Selçuk (~45 minutes from airport). Arrive: 10-11 am.
11:00 am — Ephesus (2.5-3 hours). One of the best-preserved Roman cities in the world. The Library of Celsus, the theater (capacity 24,000), Curetes Street, and the terraced houses (separate ticket, ~660 TRY, highly recommended for the mosaics). Total entry ~1,200 TRY. Wear sun protection — the site is almost entirely exposed. Arrive from the upper gate (Magnesia Gate) and walk downhill to the lower gate for the best flow.
See the Ephesus visiting guide.
2:30 pm — House of the Virgin Mary (optional, 10 km from Ephesus). A pilgrimage site where Mary is said to have lived her final years. Entry ~300 TRY. Peaceful, non-crowded, short visit.
4:30 pm — Selçuk town. The small market town of Selçuk is pleasant and has good hotels. The Temple of Artemis ruins (one of the Seven Wonders of the Ancient World — now a single column in a field) are 2 km from town; worth a 20-minute detour for context.
6:00 pm — Check in to Selçuk hotel. Budget: Boomerang Guesthouse or Artemis Guesthouse (good value, ~2,500-5,000 TRY per night / ~72-145 USD). Or Nişanyan Houses (nearby village, more atmospheric, pricier).
7:30 pm — Dinner in Selçuk. A relaxed evening in a small town after the intensity of Istanbul and Cappadocia. The tavernas near the basilica of St John serve local Aegean food — mezes, grilled fish, izmir köftesi. Budget 400-600 TRY per person.
Day 6: Pamukkale — the white terraces and Hierapolis
8:30 am — Drive from Selçuk to Pamukkale: approximately 3 hours by bus (bus from Selçuk to Denizli, then minibus/taxi to Pamukkale) or private transfer (~4,000-6,000 TRY). Arrive: 11:30 am.
11:30 am — 4:00 pm — Pamukkale white terraces and Hierapolis. Entry to the travertine terraces and Hierapolis archaeological site combined: ~900 TRY. The white calcium carbonate terraces (filled with warm mineral-rich water in some pools) are one of Turkey’s most photographed sites. You can walk barefoot across the terraces (shoes must be removed).
Above the terraces: Hierapolis, a Greco-Roman spa city built over the hot springs, with a theater (well preserved), the Martyrium of St Philip, and a large necropolis. The Hierapolis Archaeological Museum is worth 45 minutes. Allow 3-4 hours total.
Honest note: the terraces are highly managed — only some pools are filled with water at any given time, and the site can feel heavily touristic in peak season. Still worth seeing; lower expectations from photos showing “pristine white terraces” and you will not be disappointed.
See the Pamukkale visiting guide and the Hierapolis guide.
5:00 pm — Check in to Pamukkale village hotel. Staying in the village (directly above the terraces) lets you visit at sunrise or late evening when crowds thin. Budget: several mid-range hotels with roof pools overlooking the terraces, 3,000-6,000 TRY per night.
7:00 pm — Walk the terraces again at sunset. The white travertine turns gold, then pink, then blue. Far less crowded than midday.
8:00 pm — Dinner in the village. Simple, good food: köfte, salads, fresh bread. Budget 300-500 TRY per person.
Day 7: Return to Istanbul
Morning options depending on your outbound flight:
Option A — Fly home from Denizli (DNZ): Take a morning transfer from Pamukkale to Denizli Çardak airport (45 minutes). Flights connect to Istanbul IST or directly to many European cities.
Option B — Drive back to Izmir (IZM) for a larger flight hub: 3 hours by car/bus. More flight options.
Option C — Return to Istanbul for a final night: Morning transfer to Denizli or Izmir, fly to Istanbul (landing ~1-2 pm), free evening in Istanbul. Good if your international flight departs the following morning.
Honest note: Turkish domestic flights often have connections through Istanbul or Ankara — check that the routing makes sense for your final destination before booking.

Frequently asked questions
Can I do Istanbul, Cappadocia, Ephesus, and Pamukkale in less than 7 days?
Six days is tight but possible if you cut Pamukkale or reduce Cappadocia to 1 night (no balloon). Seven days is the correct minimum. Ten days is far more comfortable. See the 10-day Turkey highlights itinerary.
Should I book all internal Turkey flights in advance?
Yes — especially for Cappadocia. Summer and spring flights to Cappadocia (NAV/ASR) sell out weeks ahead. Book internal flights at the same time as your international flights.
Is Pamukkale worth the detour?
Yes, if you enjoy ancient Roman sites (Hierapolis is genuinely impressive). If the white terraces alone are your interest, temper expectations — they are managed and the “postcard” experience requires specific pool conditions. See Ephesus and Pamukkale together guide for the honest assessment.
Can I combine this circuit without organized tours?
Yes, with the right preparation. Flights, transfers, and hotels can all be booked independently. The main reason to use organized tours (like the Istanbul day-trip Cappadocia option) is convenience, not necessity. Book flights and hotels independently for better prices.
